Maple Roasted Root Vegetables

1 lb. potatoes
1 lb. carrots
1 lb. beets
1 onion
Olive oil
4 cloves garlic, minced
2 tablespoons maple syrup or brown sugar
Salt and pepper, to taste

Preheat oven to 425 degrees. Cut root vegetables into 1” pieces and spread evenly onto oiled sheet pan. Sprinkle minced garlic, salt and pepper and more olive oil on top so that veggies are fully moistened. Lightly drizzle 2 tablespoons of maple syrup or brown sugar on top and mix in.

Bake for 30-35 minutes, stirring every 10 minutes or so to prevent sticking. Feel free to add more olive oil to help with dryness. Serves 4.
