Pan Roasted Brussels Sprouts

2 c brussels sprouts, trimmed and cut in half lengthwise
1-2 tbsp olive oil
Salt and pepper, to taste
¼ c grated cheese

Heat oil in skillet over low-medium heat. Place sprouts flat side down in a single layer. Sprinkle with salt and pepper and cover. Cook for 5-7 minutes or until bottoms turn brown and spouts are just tender. Cover and cook for longer if needed. Uncover, turn up the heat, and cook until the sprouts are a deep brown. Stir to brown on the rounded side. Remove from heat, and sprinkle with grated cheese. If needed, season with more salt and pepper.
