Smashed Red Potatoes

1 pound potatoes
2 tbsp butter, softened
2 garlic cloves, minced
1 tsp rosemary, sage, and/or thyme
Salt and pepper to taste
½ c Cheddar cheese, shredded

Preheat oven to 450. Cover potatoes with water and boil under tender, 15-20 minutes. Drain and place on baking sheet. Smash each potato with potato masher or the bottom of a glass jar. You are looking to have the potato smashed but still in one piece. Brush with butter and top with garlic. Bake 30-40 minutes or until edges turn brown and crispy. Remove from oven and top with herb(s) and cheese. Place back in oven to melt cheese.
