1-2 cucumbers, diced
2-3 tomatoes, diced
1/2 medium onion, chopped
2 tablespoons balsamic or red wine vinegar
3 tablespoons olive oil
Salt and pepper, to taste
1 can beans, drained (black, kidney, chickpea, etc.)
½ tablespoon dried parsley or basil (optional)
Combine all ingredients in medium sized bowl and stir. Let marinate in refrigerator for 5-10 minutes & enjoy! Serves 4.
