Stir-fried Bok Choi and Garlic

1-2 tbsp oil
2 garlic cloves, chopped
½ medium onion, chopped
1 head bok choi, cut into quarters lengthwise
1 tbsp soy sauce
Salt and pepper, to taste

Heat oil in skillet over medium-high heat. Add garlic and onion and cook for about a minute. Add bok choi, soy sauce and 2 tablespoons of water and cover. Cook for about 4 minutes until bok choi is tender. Serves 4.
